Easy and healthy breakfast pancakes with Oats & Banana(eggless).
Pancakes are my family’s favourite breakfast. And me too, as it tastes delicious and can be made in a jiffy. All you need is to combine all the needed ingredients, gently mix and make some delicious pancakes. I tried many recipes using Oats, this oats banana pancake is ultimate as I tried many times whenever I see overripe banana which is sinfully sitting on my fruit basket .
The pancake comes out very soft and fluffy with natural sweetness from banana. And again this would be perfect breakfast during hectic weekday mornings. Kids would definitely love these type of pancakes. I tried it in both version with / without eggs – both are working good. Try my tested and tasted easy peasy pancakes without any fuss.
Preparation & Cooking time : 20 Minutes
YIELD : 6-8 Pancakes
Oats – 1 cup ( I use Quaker’s Oats)
Flour – 1 cup ( I use rice flour)
Honey – 2 tbsp
Ripe Banana – 2 small / 1 large
Milk – 1 cup
Baking Soda – 1/2 tsp
Salt a Pinch
Cinnamom powder – 1/2 tsp
Oil / Butter for frying
First powder the Oats. Mash banana and keep aside.
In a mixing bowl combine powdered Oats, flour, baking soda, salt, cinnamom powder, mashed banana, honey. Now pour milk and mix well until forms a good pouring batter.
Heat a fry pan. Grease the butter, pour a ladle of batter, spread if needed. Cook on medium fire both sides until golden color.
Serve topped with butter and with honey / maple syrup.
Replace milk with soy milk to make it make a dairy free pancake.
Try with glutinous rice flour / regular fine rice flour in place of all purpose flour for an healthier option.
