Idli Milagai Podi / Chilli Powder

Idli chilli powder is an excellent handy substitute when you really find hard time to prepare any sambhar,chutney, gravy for your staple south Indian breakfast recipes. Despite buying it from supermarket I use to prepare this podi always at home as it serves as a versatile component to prepare some curry, kolambu, sometimes will be very helpful to replace sambhar powder if you do not have it in hand. Try this simple and versatile podi to please your tastebud with Indian touch.

Idli Milagai Podi / Chilli Powder

YIELD – 100grams


Black Urad Dhal -1 cup
Thoor Dhal- 1/4 cup
Bengal Gram Dhal-1/4 cup
Dried Red Chilli – 8-10 no.
Sasame Seeds- 1 tbsp
Hing-1 tsp
Salt  To Taste
Oil- 1/2 tsp

Idli Milagai Podi / Chilli Powder


  1. Heat oil in a fry pan add all dhal with hing and roast on medium flame without burning the ingredients till aromatic and golden color.
  2. Tranfer the dhal mixture to the plate and set aside to cool.
  3. Dry roast red chilli and keep aside.
  4. In the same pan roast sesame seeds and add to the dhal mixture.
  5. Using spice blender or mixer coarsely powder all the dhal mixture.
  6. Now combine the red chilli, sesame seeds and required salt.
  7. Make a smooth powder and cool the podi before transferring it to the container.
  8. Serve this Idli chilli podi along with gingelly oil as a perfect side with Idli, Dosa, Paniyaram.
  9. This can be preserved for many days.

Add / Adjust the usage of red chilli depending on the spice. If you wish add few springs of dried  curry leaves while blending the podi for added flavor.
You can also use whole white urad dhal for preparing podi(black urad dhal will be more tasty and healthy too).
As I said in the introduction that this podi can be used for preparing many dish such as kara kolumbu, pooriyal/curry and gravy.
